Benefits of Frozen Shrimp

Of course, everyone loves shrimp. They are delicious and easy to cook. Shrimp is the most consumed seafood in the world. However, you might be surprised to learn that when you buy shrimp from a grocery store, they might not be as fresh as those sold by independent fishermen who sell their catch daily.

Fresh shrimp are sold at the counter or on the ice at seafood stores. Shrimp frozen in grocery stores are usually kept in a freezer for longer periods than what is considered standard for freshness. To make matters worse, some commercial shrimps are even seasoned with salt water and preservatives before being frozen. As a result, you might spend more money on shrimp that do not taste as good as if you had bought them from a local fisherman directly.

Because of this, it is best to buy your shrimp from local fishermen who sell their catch daily. They will also let you choose the size and variety of your choice. Of course, this will mean paying a little more than the price at a grocery store, but it will be worth it because it would be fresh and of high quality.

Shopping for fresh shrimp can be a confusing experience. There are wide varieties to choose from, and not all of them are as easy to prepare as others. Shrimps that come in packages are often pre-cooked but may be frozen or fresh. It is important to understand that the freezing process does not change the shrimp's nutritional value. On the other hand, fresh shrimps are sometimes better than frozen ones.

If this is the case, why should one buy frozen shrimp?

Fresh Shrimp: Fresh shrimp is either caught wild or raised on farms. It is usually kept in ice or cold water until it is sold. The problem with this type of shrimp is that it has a very short shelf life compared to Frozen Shrimp. If you buy fresh shrimp, eat them within 24 hours!

Frozen Shrimp: Frozen shrimp comes from both wild and farmed sources. However, some frozen shrimps have been previously cooked (like those in cocktail sauce) before being frozen for long-term storage. Frozen shrimps are flash-frozen immediately after being harvested from the sea or farm. This ensures they retain their taste and nutrients when stored in the freezer for long periods.

As you may know, shrimp is a popular seafood. It's full of protein, low in fat and high in vitamins. The problem with shrimp, though, is that it spoils very easily. Shrimps are harvested at sea, frozen and shipped to stores, where they are kept on ice until sold. However, the shrimp displayed at supermarkets undergo an aging process called "retrogradation." Retrogradation changes the texture and flavor of the shrimp over time.

When shrimp is displayed on ice, it does not mean it has been defrosted. The frozen shrimps, kept on ice, are the same shrimp you see in the refrigerated freezer section. Once defrosted, shrimp begins to deteriorate immediately; it will turn rubbery and acquire a smell far from fresh or appealing. Make note that defrosted or fresh shrimp, as claimed by the supermarket, are only best consumed within two days once defrosted.

When you buy shrimp from the seafood counter, you might look for a specific part of the shrimp. If you wanted heads-on shrimp, would you expect to find that in a bag of frozen? Frozen shrimp is also typically smaller than its fresh counterpart, so if you wanted to buy peeled and deveined shrimp, maybe that's different from what the fishmonger has in stock.

Benefits of frozen shrimps:

You may wonder why I'm talking about fresh shrimp versus frozen shrimp. Fresh or frozen? Which one is better? The answer is that fresh shrimps are usually more expensive than frozen shrimps. But before you think it's because of their quality, let me tell you something: Frozen shrimps are fresher than fresh ones! How can that be?

The fact is that most shrimp are immediately frozen after being harvested and delivered to the store as they are perishable. This means that most of the shrimp sold in the stores are frozen and will never go bad. On the other hand, when it comes to those displayed on ice at the counter, they are most likely defrosted. And by defrosting them, their quality deteriorates each time they're exposed to air.
